Asparagus & NZ Brie Puff Pastries 

Looking for the perfect spring share plate? These baked Asparagus and NZ Cheese Puff Pastries from our friends at Countdown are deliciously easy and sure to please. Don’t forget the drizzle of honey dressing as the finishing touch!

  • Asparagus, trimmed - 3 bunches

  • Ready-rolled frozen puff pastry, partially thawed - 2 sheets

  • Wheel of brie, thickly sliced - 125 g

  • Egg, lightly beaten - 1

Honey Dressing

  • Lemon, zested and juiced - 1

  • Honey - 1 Tbsp

  • Extra virgin olive oil - 1 Tbsp

  • Thyme leaves - 1/2 tsp

Method

  1. Preheat oven to 220°C (200°C fan-forced). Line a baking tray with baking paper.

  2. Bring a saucepan of water to the boil. Blanch asparagus in the boiling water for 30 seconds or until just tender. Drain. Rinse under cold water to stop the asparagus cooking further. Drain well.

  3. Quarter each pastry sheet into 4 squares and place on tray. Top each square with asparagus and a slice of brie. Brush pastry edges with a little egg, then fold over to enclose filling. Brush pastry with egg.

  4. Bake for 15 minutes or until golden and crisp.

  5. To make the honey dressing, place the remaining ingredients in a small bowl and whisk to combine. Season with pepper. Serve puff pastries with honey dressing.
