Barrys Bay Cheesy Scones

This recipe from Barrys Bay Cheese - is a classic and we’re sharing it in recognition that its key ingredient - Barrys Bay Traditional Cheese, Canterbury Red was named Tetra Pak Champion Retail Cheddar Cheese at the NZ Champions of Cheese Awards 2025.

Ingredients:

2 cups grated Barry Bay Canterbury Red (Tetra Pak Champion Retail Cheddar Cheese 2025)

2 cups grated Cumin Cheddar

4 cups flour

4 tsps baking powder

2 tsps sugar

1 tsp salt

Good pinch of cayenne pepper

2 cups of milk

Method:

Sift all the dry ingredients into a bowl then mix in the grated cheese. Make a well in the centre and pour in the milk. Mix lightly then on a floured bench, shape the dough and cut into evenly sized squares or circles. Bake for 15-20 mins at 220 degrees Celsius until golden. Makes about 16 average scones or 12 big ones! They are delicious by themselves, but who can resist a good slab of butter?!
