Polenta Crumbed NZ Brie 

Thanks to the team at Countdown for sharing this recipe with us to celebrate NZ Cheese Month 2023. It’s the perfect dish to wow dinner guests with at the end of the night by enjoying it as an alternative to dessert.

Serves 4

1 Egg

Salt and pepper, to taste

1 Tbsp Chopped chives

1/2 cup of Polenta

1 X 125g NZ Brie

2 Tbsp Oil

Crackers, to serve

Method

Preheat oven to 180°C.

In a bowl, whisk the egg and season with salt and pepper.

In a wide shallow bowl, add the chives to the polenta.

Dip the Brie into the egg, then the polenta. Repeat for an even coating.

Heat the oil in a frying pan. Briefly, fry the Brie on all sides. Place into the oven to bake for 15 minutes.

Serve warm with crackers.
